Ingredients

  • 2kg lamb mince
  • 2 Leeks, chopped
  • 1 tsp chilli flakes
  • 1 tbsp smoked paprika
  • 1 tsp ground ginger
  • 4 tsp ground cumin
  • 2 tsp ground coriander
  • 2 tbsp fresh chopped mint
  • 2 tbsp freshly chopped parsley
  • 3 eggs
  • 1 cup bread crumbs
  • Salt
  • Pepper

Method

  1. Place all the above ingredients into a large mixing bowl and combine well. Season with salt and pepper.
  2. Test a small patty in a frying pan to make sure your seasoning is correct.
  3. Divide and weigh the mixture into 50g balls and set aside. Soak your skewers in cold water overnight before placing on each skewer.
  4. Once on the skewers, store in a clean, sealed container for service

Yield: 2,23kg (44 Koftas / 22 portions)
